Within the chewing gum manufacturing process, encapsulation can prolong flavour release by encapsulating high intensity sweeteners, acids and flavourings in the product. The shearing action caused by chewing provides a prolonged release of the ingredients, enabling the production of gum with a high impact long lasting taste.
