Sayfood - Paris -Saclay Food and Bioproduct Engineering Research Unit - is a UMR created in 2020 under the double guardianship of INRAE and AgroParISTECH.
Located on the Agro Paris-Saclay campus in Palaiseau (91) and attached to Paris-Saclay University, it benefits from the research, teaching and innovation eco-system of the Saclay plateau.
Its main mission is to acquire new scientific knowledge and to offer new interdisciplinary approaches to bioproducts (food, packaging, biomolecules) and processes. The SAYFOOD UMR has the following equipment:
• A 2300 m2 technological hall, comprising a 40aine of instrumented pilots for the study, understanding, instrumentation and modeling of unit operations (thermomechanical treatments, fermentations, separations), as well as a food zone for the manufacture of products under controlled sanitary conditions (lines dedicated to the transformation of cereals and cheese transformation, more a modular zone)
• Instrumented prototypes developed for specific research (dynamic gastrointestinal in vitro digestive, in vitro devices to study chewing and swallowing, cooking oven equipped with a system for capturing volatile compounds in dynamics ...)
• Laboratories of physico-chemistry-microscopy, chemistry-biochemistry, microbiology-molecular biology

SayFood - Paris-Saclay Food and Bioproduct Engineering research unit - est une UMR créée en 2020 sous la double tutelle d’INRAE et d’AgroParisTech.
Implantée sur le Campus Agro Paris-Saclay à Palaiseau (91) et rattachée à l’université Paris-Saclay, elle bénéficie de l’éco-système de recherche, d'enseignement et d’innovation du plateau de Saclay.
Sa principale mission est d'acquérir de nouvelles connaissances scientifiques et de proposer de nouvelles approches interdisciplinaires en ingénierie des bioproduits (aliments, emballages, biomolécules) et des procédés. SayFood a pour ambition de contribuer au développement de nouveaux systèmes alimentaires durables et à une innovation produits-procédés intégrant les contraintes de la production agricole et les besoins-attentes des consommateurs. Pour conduire ses recherches, l’unité s’appuie sur un ensemble de disciplines couvrant les sciences des aliments, la microbiologie, le génie des procédés et les sciences des consommateurs.
L'UMR SayFood dispose des équipements suivants :
• une halle technologique de 2300 m2, comprenant une 40aine de pilotes instrumentés pour l'étude, la compréhension, l'instrumentation et la modélisation des opérations unitaires (traitements thermomécaniques, fermentations, séparations), ainsi qu'une zone alimentaire pour la fabrication de produits dans des conditions sanitaires contrôlées (lignes dédiées à la transformation des céréales et à la transformation fromagère, plus une zone modulable)
• des prototypes instrumentés développés pour des recherches spécifiques (digesteur dynamique gastro-intestinal in vitro, dispositifs in vitro pour étudier la mastication et la déglutition, four de cuisson équipé d'un dispositif de captage des composés volatils en dynamique...)
• des laboratoires de physico-chimie-microscopie, de chimie-biochimie, de microbiologie-biologie moléculaire
• un plateau dédié à l'analyse sensorielle et à l'étude du comportement des consommateurs
