Dès lors, l’IEHCA promeut une approche pluridisciplinaire du fait alimentaire. S’attachant à diffuser cette culture scientifique auprès d’une large audience, l’IEHCA œuvre à la reconnaissance des savoirs et savoir-faire culinaires en tant que patrimoine culturel.
Aux côtés de la Mission Française des Patrimoines et des Cultures Alimentaires, l’IEHCA a porté et initié l’inscription par l’UNESCO du Repas gastronomique des Français sur la liste du patrimoine culturel immatériel de l’humanité (2010) et a assuré le pilotage scientifique du dossier des savoir-faire artisanaux et la culture de la baguette de pain française (2022). Il a aussi piloté l’Inventaire du patrimoine culinaire de la région Centre-Val de Loire (2010).
En 2013, dans le prolongement de cette dynamique, la ville de Tours s’est vue honorée du label « Cité de la gastronomie » permettant de développer le projet de Villa Rabelais, Maison des cultures Gastronomiques, qu’elle mandate avec l’Université de Tours, pour piloter ce centre culturel et scientifique dédié à la gastronomie. La Villa Rabelais abrite à présent un centre de documentation unique en Europe dédié aux Food Studies avec un fonds de plus de 10000 ouvrages. À ses côtés, une bibliothèque gourmande forme un espace culturel et d’animation autour du livre gastronomique.
Enfin, l’IEHCA propose plusieurs formations, développe une politique éditoriale dynamique à travers la revue Food & History et la collection « Tables des Hommes », organise de nombreux colloques et conventions internationales et élabore un programme d’actions scientifiques et culturelles dont les Rencontres François Rabelais en constituent l’un des temps forts en portant à l'occasion de tables rondes un regard sur la cuisine d'aujourd'hui et de demain.
